This beer is another example of the transformative qualities of Brettanomyces. Before packaging, this beer resembled one of our juicy pale ales. After a little time conditioning in can the Brett starts to metabolise some of the compounds conferred by the hops, changing aromas already there, whilst also making new fruity and floral aromas from previously non-aromatic components, pretty clever! The tropical juiciness of Simcoe is amped up by the Brett giving a melody of sticky tropical fruit and candy with just the right amount of floral, herbal character.
