Mixed fermentation ale with Raspberry.
The base beer is a blend of 1-2 yrs old beers conditioned in ex red wine barrels. Before packaging, this blend spent 4 weeks on 225g/l of raspberries. Bright, funky, tart and with a beautiful raspberry jamminess – this Blend is fruity and complex yet refreshing to drink.Most of our mixed fermentation beers have a similar base beer, which we are calling Simple Wheat Thing. It has pilsner malt, flaked wheat and wheat malt, to create a simple wort, which has low bitterness from moderate hopping.
It was fermented with our house yeast, as well as a range of other yeast and bacteria to create soft fruit aromas and gentle acidity. It was conditioned in oak barrels for 6-9 months, and different barrels blended to refine the balance. The fermentation character is evolving, but is not too dominant in the beers this year.This creates a restrained base beer for the raspberries to shine. We used local Gloucestershire raspberries, which are super bright, bold and jammy. It was bottled in August 2020 and has spent the subsequent months conditioning, allowing the flavours to come together. This beer will keep for years, but we recommend drinking within 1 year to enjoy the intensity of the fruit.Tasting note: Bold aroma of jammy, vibrant raspberries.
